First Week as Chalet Hosts

Casey and I have officially completed our first week as chalet hosts. Our first guests were a lovely couple from the UK (hello J and K if you are reading, miss you already) that were a blast to take care of. Here are the meals that we made this week, minus one that we forgot to photograph. 

First Meal

First Course: Sun dried tomato and basil humus with onion, feta, fresh tomato, kalamata olives, and cucumber.


Main Course: Herb crusted rack of lamb with sweet Israeli cous cous, grilled roma tomato and tzatziki sauce. 

Dessert: Strawberry Napoleon with balsamic reduction.

Second Meal
First Course: Baked brie with tomato relish, italian herb crostini, and a balsamic reduction.

Part of main course: Potato asparagus gratin

Part of main course: Salmon en papillote

Dessert: Creme Brulee 

Third Meal

First Course: Mixed field green salad with bacon, red onion, feta cheese, candied pecans, raspberries and raspberry vinaigrette.

Main Course: Roast cornish game hen with julienne carrots and wild mushroom risotto.

Dessert: Apple crisp with vanilla bean ice cream.

Prosciutto, goat cheese, feta, cheddar jack and chive frittata. 

Fourth Meal

First Course: Pan seared scallops with sea food cream sauce (two are wrapped in prosciutto).

Main Course: Spicy flank steak with roasted potatoes (fingerling and peruvian purple) and sauteed zucchini. 

Dessert: Brownie Baked Alaska
